2 skinless, boneless chicken breasts
1 can green beans
1 can cream of mushroom
2 small potatoes
butter
foil
Dice chicken breasts and split between 2 larges pieces of foil. Drain green beans, split between packets. Split cream of mushroom between packets. Dice potatoes and split between packets. Put small pats of butter in each packet. Liberally season each packet with salt, pepper, onion, and garlic. Close packets (rolling edges to make as airtight as possible).
Place packets on liner (they'll probably leak a little). Put in oven at 350 for 1 to 1.5 hours. Serve with shredded cheese and jalapenos.
Sometimes I add carrots. Usually I open the refridgerator and pantry and see if there is anything else in there that sounds good added to the packets.
It is easier to dice the chicken if you do not let it completely thaw out.

My recipes....
Anybody who cooks something from my recipes-----Your only requirement is feedback - How can I make it better, etc!
Potato and Meat Skillet Casserole
1 lb grd beef
1 can cream of ckn
1 can cream of mushroom
potatoes
cheese (shredded)
Liberally season beef with salt, pepper, powdered onion, and powdered garlic) Brown and drain grd beef. Add both soups. Dice potatoes and add to your preferred consistency. Throw in a handful of shredded cheese. Cover and simmer until potatoes are soft (usually 20-30 minutes) and stir occasionally.
Sometimes I throw in a can of green beans. Sometimes I slice a bell pepper and throw that in. Sometimes I throw in a dash of cayenne.
I serve with shredded cheese and diced jalapenos.
Perfect for those with itty bitty kitchens!

Mexican Stacks
From the kitchen of Tiny Lackey....
1 lb grd beef
1 jar of your fave salsa
shredded cheese
tortillas
Brown and drain the ground beef, then add salsa to whatever consistency you prefer (a little more, some of your fluid will cook off). Simmer 5 or 10 minutes.
In a pie plate, layer tortillas, meat mixture, cheese; then repeat.
Place in hot oven until cheese is melted, serve.
Sometimes I add a can of refried beans.....usually I blend the salsa.....sometimes I add chopped jalapenos....
